Memorial Day is around the corner! It snuck up on me. We’ll be traveling up to Seattle for Memorial Day so no BBQ for us but that didn’t stop me from making all the BBQ recipes so to live vicariously through you. This slushy mocktail is incredibly refreshing and is reminiscent of those 7 Eleven Slurpees without all the crap AND no added sugar! I might just be sipping on these all summer long.

Just because the recipe is for a mocktail doesn’t mean it has to be alcohol free. Feel free to add your liquor of choice. I personally think a gin would taste great for those who aren’t sensitive to those grains.

Mocktail: Watermelon Mint Slushy

Watermelon Mint Slushy

Makes 2

Ingredients

3 c. ice
2 c. frozen watermelon
2 tbsp. lime juice
1 bunch of mint leaves (about ¼ cup)



Instructions

Chop watermelon into bite sized pieces and freeze for at least 4 hours (best if overnight).

Add ingredients to a high speed blender and blend until no more large chunks remain.

Pour into a chilled glass and garnish with a slice of watermelon and sprig of mint.

Drink and enjoy!
