Vegan Parsley Cashew Pesto

Use this pesto on anything you’d normally put pesto on! It’s vegan, rich in flavor and a great spread or sauce! What I love about making your own sauces besides having control over what ingredients are in it is that you can really customize the recipe to the intended purpose. Want it thicker for a pesto spread? Make as is. Want it as more of a dressing or thinner sauce? Use a little more olive oil or water it down a bit. 

Vegan Parsley Cashew Pesto

Vegan Parsley Pesto

Yields ~1.5 c.

Ingredients

1 bunch of flat leaf parsley
1 clove of garlic (finely chopped)
¼ c. cashews 
¼ tsp. nutritional yeast
pinch of sea salt
olive oil

Instructions

Trim off just the very ends of the parsley keeping most of the stem. 

Place all ingredients except olive oil in a blender and pulse until finely chopped. Add about ½ c. olive oil and pulse until smooth. If it’s too dry and not smooth enough add more olive oil.
