I’ve known that I’ve been allergic to peanuts since I was four and my two and three year old self never got around to trying Thai Peanut Sauce. People seem to freak out over the stuff but all I have to go off of is the smell and what it looks like. So I can’t really say this recipe was inspired by the Thai flavors in that dish because who even knows if it’s close BUT I do know it’s such a satisfying vegan meal and it can be enjoyed cold or hot depending on your mood. And that’s all I need to know! 

Feel free to change up the veggies with whatever you have on hand! If you are extra hungry and eat meat add steak or chicken or even shrimp or a flakey white fish. All would be great!

Thai Cashew Noodle Salad

Serves 4

Ingredients

Cashew sauce (see recipe below)
8 oz brown rice noodles
1/2 c. carrots (julienne sliced)
1 large head of broccoli (steamed)
1 bell pepper (diced)
Fresh basil (to garnish)
Fresh cilantro (to garnish)
½ c. cashews
Chives* (to garnish)
Chilli pepper (sliced)*

*optional

Sauce

¼ c + 2 tbsp. creamy cashew butter
1 tbsp. coconut aminos
2 tbsp. lime juice
2 tsp. honey (or liquid sweetener of choice)
Water (about 1-3 tbsp.)
½ tsp. crushed red pepper
1 garlic clove  (minced)
1-2 inches of ginger (grated)
Lemongrass (minced)
Salt to taste

Instructions

To make sauce add cashew butter, coconut aminos, lime juice, and honey to a small bowl and whisk. Add water a little at a time until sauce reaches desired thickness. Add garlic, ginger, lemongrass and mix until evenly distributed. Set sauce aside.

Cook rice noodles according to package instructions. Assemble bowls with cooked rice noodles, carrots, broccoli, and bell pepper. Tear basil and sprinkle cilantro over top. Finish with cashews, chives, and chili peppers. Finally drizzle with sauce and serve.

Note: If anticipating leftovers, I would store all the veggies in one container, the noodles in another and wait to add the sauce as it could get too soggy or rich.
