Refined Sugar Free, Gluten Free Strawberry Lavender Linzer Cookies

Okay! Are you ready for some gluten free, refined sugar free goodness?! Enter these florally, sweet, but not too sweet, strawberry lavender linzer cookies. The cookies themselves are vegan but the jam filling has honey. If you’re looking for a vegan recipe- feel free to sub with your favorite strawberry jam/jelly.

Strawberry Lavender Linzer Cookies

Yields 1 dozen sandwich cookies.

Ingredients:

2 1/2 c. almond flour (I use this one or this one)
1/2 tsp. salt
1/2 tsp. baking soda
2-3 tbsp. lavender (depending on how florally you want them)
1 tsp. lemon zest
1/4 c. coconut oil (melted)
1/4 c. maple syrup
2 tsp. vanilla extract
Strawberry Jam (recipe here)
Powdered sugar* (recipe here)

Instructions:

Preheat oven to 350 degrees Fahrenheit.

Add almond flour, salt, baking soda, and lavender to a large bowl. Mix until combined.

In a separate bowl combine lemon zest coconut oil, maple syrup and vanilla extract. A little at a time, add the dry ingredients to the wet and stir until a dough comes together. The dough will be slightly clumpy. If the dough is too dry, add a little more melted coconut oil. Let sit between additions so the flour has time to absorb the liquid.

Roll out the dough between two pieces of parchment paper. Place parchment paper with rolled out dough in the refrigerator for about 30 minutes to firm up. Remove from refrigerator and cut into circles.

In half of the cookies cut out smaller circles from the center. This will be where the jam pokes through when assembled.

Carefully transfer cut outs to cookie sheet lined with parchment paper. Place cookies onto a baking sheet lined with parchment paper. Bake for 6 to 9 minutes, until just golden brown at the edges.

Cool completely, and garnish the tops (the donut shaped circles) with powdered sugar.

Add a small scoop of jam* to the whole circle cookies. Sandwich the jam with the donut shaped circle over top.

*I recommend waiting until the last minute to add the jam to the cookie for maximum freshness. The jam releases moisture and will soften the cookie over time.
