Spicy Red Curry Tahini Sauce

At the end of the week we always have a few straggler veggies at the bottom of our fridge and we always have some sort of grain in our pantry (rice, quinoa, etc.) This is where this sauce comes in handy! 

Roast up the leftover veggies, throw them over a grain, drizzle with this sauce and sprinkle on some nuts/seeds. Now you’ve got the EASIEST, TASTIEST meal in about two seconds! Plus no food waste! I always keep red curry paste, tahini and lime in my fridge so it’s easy to throw together on a whim.

Spicy Red Curry Tahini Sauce

Ingredients

2 tbsp. red curry paste
1 tbsp. tahini
1 tbsp. lime juice
1 tsp. maple syrup*
salt and pepper to taste
1 garlic clove (minced)
water to thin

*omit if doing Whole30

Instructions


Whisk together red curry paste, tahini, lime juice, maple syrup, salt and pepper. Stir in garlic. Mix in water a little at a time until reached desired consistency.
