This salad is the perfect summer side or crisp lunchtime salad. It’s quite tart which is a nice balance between the sweet fruit and bitter radicchio.

Radicchio and Stone Fruit Salad

Serves 2-4

Ingredients


1 head of radicchio
1 lemon (flesh) +1 tbsp. lemon juice
1 nectarine or peach cut into long slivers
¼ c. red onion (sliced thinly)
1 tbsp. fresh mint 
1 tsp. pickled mustard seeds (recipe here) or ¼ tsp. course ground mustard
1 tsp. olive oil
¼ tsp. white wine vinegar
Salt and pepper to taste


Instructions

Clean and chop radicchio into ~1 inch pieces and place radicchio and onion in a large bowl.

With a paring knife trim the off the peel and pith of the lemon- careful to preserve the flesh. Trim along each segment to remove the flesh wedges. 

In a small bowl whisk olive oil, white wine vinegar and lemon juice. Pour over radicchio and toss. 

Pour radicchio on serving platter and tuck in lemon, stone fruit, and mint. Distribute pickled mustard seeds over top. Finish with salt and pepper.
