Another quick pickle for the books! This recipe makes a great little side to any meal or top a hot dog with it! Wow that just popped into my mind and actually sounds so good. I especially love it this time of year because it’s so easy to tote to the neighbors BBQ. No soggy salads here!

Quick Pickled Sesame Cucumber

Pickled Sesame Cucumber

Ingredients

4-6 mini seedless cucumbers (sliced in ⅛-¼ inch slices)
¼ c. red onion (sliced thinly)
2 tsp. rice vinegar
1 tsp. sesame oil
1 tsp. honey
¼ tsp. red pepper flakes
Salt to taste
Sesame seeds for garnish

Instructions

Add cucumbers and red onion to a medium bowl.

In a small bowl whisk together the rice vinegar, sesame oil, honey, red pepper flakes, and salt. Taste and add more salt if necessary. Pour dressing over cucumbers and onion and toss to combine.

Refrigerate for at least 30 minutes before consuming. Best consumed within 3-4 days.
