This has become a fridge staple in our home. It’s so easy to make and nice to have on a regular basis to top off tacos, garnish salads, or add to a sandwich.
Quick Pickled Onions
1 medium red onion
½ cup of white wine vinegar
Pinch of coconut sugar
Pinch of salt
~¼ c warm water
Slice the onion into thin slices (about ⅛ inch.) Place the onions into a 16oz glass jar.
Add the white vinegar, coconut sugar, and salt. Cover and shake until coconut sugar and salt is dissolved. Add the warm water so that it covers the onion. Cover and shake again.
Gently pack the onions down into the jar so they are covered by the liquid. Refrigerate for at least an hour. Onions will last in the fridge for up to 2 weeks if stored properly.
