Gluten Free Refined Sugar Free Peaches and Cream Dutch Baby with Cinnamon Sugar

Dutch Babies look fancier than pancakes but I think they are actually easier! And everyone can eat their warm portion at the same time. This version is crispy on the bottom (don’t skimp on the butter… I’ve tried. Not worth it.) Like I was saying- crispy on the bottom soft of the top and just the right amount of sweet! It’s definitely a treat! Pull it out for brunch at your next special occasion or just next Saturday! ;)

A couple notes about the upcoming recipe. While it may seem like a lot of butter (ok it is) it’s what helps the bottom crisp and caramelize and turn to complete goodness. So don’t skimp on the butter just go with it! And definitely put it in a cast iron skillet. It will work in a pie dish but it will steam more than crisp so the bottom will be soft and not crispy. For reference read the sentence before the last. Crispy golden bottom is key!

Peaches and Cream Dutch Baby with Cinnamon Sugar

Ingredients

Dutch Baby

3 eggs
½ c. gluten free baking flour (I use this one)
½ c. milk alternative
1 tbsp. honey
pinch of cinnamon
4 tbsp. butter

Toppings

1 peach (sliced or diced)
1 tbsp. powdered sugar (recipe for unrefined “powdered sugar” here)
pinch of cinnamon
coconut whipped cream (cut this recipe in half or make it and save the leftovers)


Instructions

Preheat oven to 425 degrees F

Whisk powdered sugar and cinnamon together in a small bowl. Set aside.


Place butter in 10 inch cast iron skillet and place in the oven to melt. Watch carefully as not to burn.

Meanwhile add eggs, flour, milk, honey and cinnamon to a blender and blend on high until batter is smooth. 

Once butter is melted add the batter and return the skillet to the oven. Bake for 12 minutes and then turn off the oven. Allow skillet to sit in oven for 10 extra minutes before removing. Pancake will be slightly puffed and golden.

Top with peaches, dust with powdered sugar mixture and dollop with coconut whipped cream. Serve immediately.
