Vegan Paleo Orange Chocolate Nut Butter Cups

This dessert is so quick and the ingredients are simple; you can whip it up in less than 20 minutes and eat them later in the day to curb your chocolate craving! They are great to bring to a party too.

I used almond butter and added orange blossom water and orange zest but you can leave the orange out if you'd like. This recipe is so adaptable. You can even switch up the nut butter to whatever you have on hand. I have a feeling mint would be a good version- coconut butter filling?? Hmm! I might have to make more than one variation of these myself. Let me know what you try!

Orange Chocolate Nut Butter Cups


Ingredients

3/4 c. coconut oil
1/2 c. cocoa powder
1 tbsp. orange blossom water* (I use this one)
¼-½ tsp. of orange zest chopped finely + more for garnish
2 tbsp. honey (melted) or maple syrup
1 pinch salt
~1/4 c. almond butter
Flakey sea salt for garnish (I use this one)

Instructions

Fill mini cupcake pan with paper liners.

Melt coconut oil so it is a liquid. Combine coconut oil, cocoa powder, orange blossom water, orange zest, honey or maple syrup and a pinch of salt. Whisk until fully incorporated.

Pour mixture into each liner until mixture reaches about halfway up.

Using a ½ tsp measure, scoop heaping dollops of almond butter into the center of each liner. If the almond butter is sitting too high- give it a gentle press into the pan.

Divide the rest of the mixture into the cupcake pan to fill the liners up to the top.

Freeze for 3-5 minutes then add orange zest and flakey sea salt to the top for a pretty garnish.

Return to freezer for 45min-an hour.

Store in refrigerator.
