Ice Cream Sandwiches

Just like the childhood favorite just a little more adult and it doesn’t include any dairy or refined sugars!

Ice Cream Sandwiches

Yields ~8 ice cream sandwiches

Ingredients:

2 c. almond flour
Pinch of salt
2 tbsp. cocoa 
1/4 c. coconut oil (melted)
1/4 c. maple syrup 
Ice cream* (recipe here)

*If you make ice cream ahead of time take it out of the freezer about 15 minutes prior to assembling the ice cream sandwiches.

Instructions:

 Preheat oven to 350 degrees Fahrenheit.

 

Add almond flour, salt, baking soda, and cocoa to a large bowl. Mix until combined. 

 

In a separate bowl combine coconut oil, maple syrup and vanilla extract. A little at a time, add the dry ingredients to the wet and stir until a dough comes together. 

 

Roll out the dough between two pieces of parchment paper. Place parchment paper with rolled out dough in the freezer for about 15 minutes to firm up. Remove from freezer and cut into rectangles. Place cookies onto a baking sheet lined with parchment paper. Bake for 8-10 minutes.

 

Cool completely. 

 

Assemble ice cream sandwiches by scooping a heaping scoop of softened ice cream onto a cookie and sandwiching it with another cookie on top. Repeat with remaining cookies. Enjoy right away or pop back in the freezer for a sweet treat later on.*

 

*I suggest wrapping each sandwich in parchment paper so they don’t stick to each other then popping them in an air tight container to prevent them from absorbing any flavors from your freezer.
