Honey Glazed Chicken with Grilled Nectarines
This has quickly become one of my favorite dinner recipes. I have a feeling it will become a regular summer meal. It’s so tasty and couldn’t get any easier. And my favorite part- since it’s on the grill there is little to no clean up when dinner is finished! I hope you enjoy it as much as I do.
Honey Glazed Chicken and Grilled Nectarines
2 boneless skinless chicken breasts
2 tbsp. of organic butter
2 garlic cloves smashed
¼ c. honey
2 tbsp. lemon juice
1 tsp. ground coriander
¼ tsp. chilli powder
½ tsp. salt
Coconut oil or olive oil for coating the grill grate
Fresh basil for garnish
1/2 tbsp. melted organic butter
1 tbsp. coconut sugar
Preheat a pan to medium heat. Add butter and melt. Once the butter is melted add the garlic. When the garlic becomes fragrant add the remaining ingredients. Whisk until combined. Brush half the glaze on the chicken. Reserve the other half.
Brush each nectarine half with melted butter and sprinkle with coconut sugar.
Preheat the grill on medium heat. Lightly oil grate and place chicken on grill. Cook for about 5-8 minutes per side or until juices run clear. Periodically baste the chicken with remaining glaze.
Shortly before flipping the chicken, it’s time to place nectarines directly onto the grill. Grill until starting to char, 5-10 minutes.
Top with fresh basil.
