Creamy Vegan Risotto With Radish and Broccolini

This Creamy Vegan Risotto With Radish and Broccolini is such a comfort meal without being too heavy- perfect for summer! Feel free to mix in other veggies if you’d like or add some kick with crushed red pepper or chili oil. This risotto can be enjoyed as a meal to serve 2 or as a side to serve 4-6.

Creamy Vegan Risotto With Radish and Broccolini

Serves 4

Ingredients

4 c. low-sodium veggie broth
2 tbsp. olive oil
1 medium onion (diced)
3 garlic cloves (minced)
1 c. arborio
5 radishes quartered
1 head of broccolini
1 tbsp. lemon juice
salt and black pepper
fresh thyme or parsley for garnish

Instructions

Add broth to a sauce pot over low heat and cover with lid.

Heat a large heavy bottomed pot over medium heat and add olive oil to just coat the bottom. Add onions, stirring occasionally. Cook onions until translucent. (about 5 minutes) Add garlic and cook until fragrant. (about 1-2 minutes)

Add rice to onions and garlic. Toast until you can smell the nuttiness of the rice toasting. (about 1-2 minutes) Then add 1 cup of warmed broth and bring to a gentle simmer. Stir frequently. Allow the liquid to fully absorb. 

Continue cooking by adding 1 cup of broth at a time, simmering gently, stirring frequently and allowing the liquid to fully absorb between additions. Once you’ve used about 2.5/3 cups of broth taste to test for desired doneness. When risotto is at desired doneness finish with lemon juice, salt and pepper. Set aside.

While final addition of broth is absorbing, heat a skillet on medium heat. Add olive oil to coat the bottom of the pan. Add broccolini and cook for about 5 minutes until softened but still crunchy. Add radishes and cook until edges are starting to brown and the insides are beginning to become soft. Finish with salt and pepper. 

Mix veggies into risotto and top with fresh herbs. Serve and enjoy!
