Chia Seed Pudding

Chia seed pudding had its hay days in the health food scene not too long ago but since it’s become a classic. This recipe is just enough sweet and super creamy!

I didn't think I liked chia pudding until I tried it layered like a parfait with crunchy granola and fresh berries! Let me tell ya- the variation in texture makes all the difference.

Ingredients

Chia Pudding

1 13.5 oz can of full fat coconut milk
¼ c. chia seeds
1 tbsp. maple syrup*
1 tsp. vanilla

For Parfait (optional)

Nora’s Granola (recipe here)
berries

*skip if making it Whole 30 compliant

Instructions

In a mixing bowl add coconut milk, chia seeds, maple syrup, vanilla and whisk to combine. Make sure there are no lumps and milk is fully incorporated.

Transfer to a glass container with a lid. Refrigerate overnight (at least 6 hours) The chia pudding should be thick and creamy at this point. If not add more chia seeds and pop it back in the fridge for another 30-45 min.

Enjoy as is or layer with granola and berries. Will keep in fridge for up to 5 days.
