This salad is so quick and easy to whip up and so versatile. Bring to a summer bbq, bridal brunch, baby shower, on a picnic etc. I kept the ingredients simple but be sure to use fresh mint and a ripe cantaloupe. Too hard and the cantaloupe won’t soak up all the wonderful flavors of the lemon and mint.
1 small cantaloupe
¼ c. loosely packed fresh mint
1 c. diced cucumber
1 tbsp. lemon juice
2 tbsp. finely sliced red onion
Pinch of flakey salt
Use a melon baller or cut melon into cubes and place in a large bowl. Tear mint leaves to release flavors and toss in the bowl.
Add lemon juice and red onion. Toss until evenly coated. Top with flakey sea salt. Salad will last a few days in the fridge.
