Black Bean Quinoa Burger

These veggie burgers are so easy to throw together and are great to add to your meal prep for an easy weeknight meal. Simply cook according to the baking instructions below and freeze in a single layer. Once the burgers are mostly frozen on the outside you can layer them between parchment paper and seal in a freezer container. To reheat simply place on an oiled piece of foil and toss on the grill, reheat in a pan with a little oil or bake in a 375 degree oven for about 10-20 minutes.

Black Bean Quinoa Burger

Makes 6-8 patties

Ingredients

2 c. of black beans
2 c. diced mushrooms
1 c. diced onions
1 carrot (diced)
1 clove garlic
½ c. quinoa (cooked according to instructions)
1 tbsp. coconut aminos
1 tsp. cumin
2 tsp. oregano
¼ tsp chili powder
Pinch of salt and pepper
2 eggs (whisked)

Instructions

Preheat oven to 375 degrees fahrenheit. Line a baking sheet with parchment paper and spread the black beans into a single layer. Place in oven and roast until beans are split open and begin to get crunchy. (about 20 minutes)

While the beans are cooking, heat a frying pan to medium high heat. Add a little oil and the mushrooms in a single layer. Brown them on both sides then add the onions. Cook for about 2 minutes or until onions start to soften. Add the carrots and the garlic. Cook until garlic is fragrant. Remove from heat and let cool to room temp. Blot mixture with a towel to remove most of the moisture.

Add room temp beans, mushroom mixture and quinoa to a large bowl with, coconut aminos, cumin, oregano, chili powder, salt and pepper. Mix well. Taste and adjust salt and pepper if needed. Add eggs and mix until incorporated.  

Take a fist full of the mixture and form it into a ball. Place the ball of the mixture on a parchment lined baking sheet and flatten with the palm of your hand. Repeat with remaining mixture.

Refrigerate patties for at least 30 minutes. Bake for 10 minutes on each side at 375 degrees.

Dress with your favorite toppings and sauce.
